It is very well made, but the insert pan has two small ridges along the inside, making clean up a disaster. The inside should be smooth. I am very disappointed. I was looking for something similar to the old Revere double boiler inserts, which are smooth on the inside. Do not try to melt chocolate with this one-cleaning it up is almost impossible!

(More customer reviews)Because I acquired much of my Calphalon cookware collection more than five years ago, I have pasta, steamer, and double boiler inserts that were made from the same hard-anodized aluminum alloy as their pots and pans. Since Calphalon now manufactures these accessories using 18/10 stainless steel, I've begun upgrading my collection. This beautiful 2-quart polished stainless steel double boiler insert is very heavy duty, has a lifetime guarantee, and it fits perfectly into my 2.5-quart Calphalon sauce pan. I place the insert in the sauce pan, which is partially filled with simmering water, to melt Callebaut chocolate for candy-making. I also use it when making Hollandaise, Béarnaise, and Béchamel sauces; and for making custard, pudding, and chocolate mousse. Calphalon also makes a 4-quart stainless steel double boiler insert that works well with their 4.5-quart sauce pan for making larger amounts of sauce or dessert recipes. I hand wash and dry this insert to keep it looking like new. I like the double handles on these Calphalon inserts much better than the one long handle on some other double boiler inserts. Someday I hope to buy a Mauviel French copper and porcelain bain-marie, but until then, I'll be very happy with this one.

Using the double boiler gives you a cushion of safety when cooking easily scorched foods, like chocolate. Without the double boiler, chances are you would have burned some of the chocolate before all of it was melted and that's a situation no cook wants to be in.

(More customer reviews)After using double boilers for years to make steel cut oatmeal, I cannot count how many times it has boiled dry. It is also difficult to clean as most standard double boilers have a groove on the lower pan. This one piece solves all the problems.
1) As the water level lowers it gives of steam that activates a whistle
2) Uses much less water than a conventional double boiler.
3) Real easy to clean.
No complaints what so ever, met and exceeded all my expectations.
The only way to improve it is to supply a lid, it does not come with one.

(More customer reviews)This is a well-made, versatile, attractive, almost-"professional" set which, if you look around for sales, offers a good deal for the money (mine was from Macey's, special $39.95).
Although the bottom unit is heavy enough to function nicely as an independant 3 qt. stockpot, the top unit should definitely not be used over direct heat (my only complaint). And I think the well-made glass lid is always a plus over a solid one.
The upper unit and steamer both have 2 qt. capacities. This size is about right for all "double boiling" or for steamimng moderate amounts of food, but might be a little small if you want to steam vegetables, etc. for more than 2 to 3 people on a regular basis.

(More customer reviews)Not only do you get a useful 2-qt pan, but the porcelain insert can be used separately in the oven (not stove top)--although I'm not sure why you'd want to. The insert is thick and heavy and (most important) is smooth inside with no ridges; the support is a stainless steel band on the outside. The insert is big enough to accommodate most pudding/custard recipes. True, the insert is made in China for All-Clad, but the quality appears to be up to snuff.

My use involves not using the lid, but the fact that the lid is glass helps so I can see what's going on when the pan is covered. The seal of the top pan onto the bottom pan is firm but not too tight so that some steam can escape. I bought this pan to make homemade clotted cream and it is perfect for that because the small size increases the density of the cream layer. It's exactly what I would recommend if you are interested in the art of clotted cream. The top pan does not sit upright when empty and sitting on a flat surface (the handle is too heavy) but that's the only imperfection and it's easy to get around (once you put anything in it, it stays upright). Easily washed in the dishwasher. Recommended!

I looked around where I live because I wanted to look at it, but we have really big ones. I was want to use it for candy and making frosting, so you see I just didn't need anything so big. This double boiler is top of the line in quality and the perfect size. I thought the price was a little more than I wanted to spend, but once I received it and used it. I decided it wasn't to high. It was perfect for my frosting and clean up was super easy. I highly recommend this pan. I will also be taking a look at some of Paula Dean's other cookware.

Considered sending it back for that reason--Primarily I just want it to reheat single-serving meals (and NOT use a microwave). But then I thought it's not a bad idea to be able to use it for larger servings. I love it. The curved bottom is nice, it's easy to clean and pretty and shiny enough that I hung it in the kitchen.(Which works better than on a shelf as the curved bottom naturally keeps it from staying upright--the photo is deceiving in that regard). Definitely recommend this and all Cuisinart pots & pans.

I have no complaints about the double boiler (which rests comfortably in a variety of Cuisinart pots, and possibly others.) It works great, has a generous capacity and comfortable handle, and cleans up like a dream.
That said, it's really easy to make your own double boiler at home, using a heavy sauce pan plus a durable glass or steel mixing bowl that rests comfortably on top, never touching the boiling water underneath. If you have all of this equipment, you probably don't need to purchase this piece. If you decide you want a dedicated double boiler, then this is a fine choice.

It's very well constructed, especially considering the low price. It's the right size, the clear lid is handy, it's easy to clean, and the bottom half of the boiler can be used, with the lid, as an ordinary pot.

My method was clumsy and the process was more like steaming that double-boiling. Since I had different quantities to cook, it was tough to find a double boiler that would fit my different needs and I didn't want to buy several double-boilers.
Then I came across this nice little item and thought that for this price, I couldn't go wrong. Well, I was right for once.
This insert is so practical and beyond versatile!
It holds a variety of things in varying volumes while sitting sturdily in a host of pots. The dome shape allows you to whip up even a small amount of sauce without the ingredients being "lost" as a thin layer on the bottom of a big pot. It cuts down the double-boiling process by more than two-fold. The nice little measurement guidelines help ensure that you are using the right quantity. It is non-stick and cleans without having to scrub. Plus, it hardly takes up any space since it nests nicely in existing pots for storage.
