All Clad Porcelain Double Boiler Review

Not only do you get a useful 2-qt pan, but the porcelain insert can be used separately in the oven (not stove top)--although I'm not sure why you'd want to. The insert is thick and heavy and (most important) is smooth inside with no ridges; the support is a stainless steel band on the outside. The insert is big enough to accommodate most pudding/custard recipes. True, the insert is made in China for All-Clad, but the quality appears to be up to snuff.

All-Clad Stainless 3-Quart Double-Boiler Insert Review

All-Clad Stainless 3-Quart Double-Boiler Insert

This is a wonderful double boiler insert with one minor exception. The ring that keeps it from falling into the pan with the water in it catches the food/sauce and therefore is harder to clean and mix. Now having said that, I still love this pan, I just wish the inside was totally smooth. I use it to make chocolate candies/truffles and the stuff melts up perfectly. Controlling the temperature is key when melting chocolate and with stainless steel its easy. I really should own two of these pans but kitchen space is limited.
(fits the non loop 3/4 qt sauce pans perfectly, The 4qt sauce pan with loop it doesn't seat well, as the loop lifts the edge allowing steam to escape.)

Some of the most luscious things in the world are made possible by double boilers. We're thinking chocolate ganache, caramel cream frosting, almond butter crunch candy, and the list goes on. Heating in a double boiler allows you more control over temperature and therefore helps prevent scorching or accidental boiling.

All-Clad 51125 All Clad Stainless-Steel 12-Inch Fry Pan with Lid Review

I received this pan today and made dinner for the family with it. It works well. The lid is reasonably well-fitting. I'm commenting here to note that when I saw this deal I wondered if it was too good to be true, but it's in fact the genuine article. And also - this pan is significantly lighter than my five- or six-year-old all-clad stainless 12" fry pan (which needed replacing after operator error) - about 1.22 kg vs 1.38 kg according to my kitchen scale. That's a plus for ease of use and cleanup, but the reduced mass must mean less heat retention if the design hasn't changed.

A useful addition to any busy kitchen, this classic 12-inch stainless-steel fry pan comes in handy for anything from sauteing vegetables or frying tofu to cooking up scrambled eggs or hash browns on a Saturday morning. Measuring 12-4/5 by 20-1/2 by 3 inches overall, its design includes gently flared sides that make it easy to slide a veggie omelet from the pan to a plate.
The bestseller among All-Clad's renowned cookware collections, the Stainless line provides serious and professional cooks all the virtues that make All-Clad's worldwide reputation unsurpassed. Its three-ply bonded design features a thick aluminum core sandwiched between an inside layer of 18/10 stainless steel and an outside layer of magnetic stainless steel, which work together to ensure fast heat-up times and even heat distribution along the base and up the sides. In addition, the cookware's 18/10 stainless-steel interior won't react with food, which means tomato-based sauces and other acidic foods won't taste metallic, and its magnetic stainless-steel exterior allows for use on induction as well as conventional stovetops.
The cookware's solid stainless-steel handle stays cool to the touch and offers a comfortable, ergonomic grip, plus it comes riveted to the pan for safety and long-lasting strength. The versatile fry pan can go safely in the oven up to 500 degrees F and under the broiler, and it comes with a stainless-steel lid that helps keep in heat, moisture, and nutrients. When finished, clean the pan and its lid by hand (recommended) or in the dishwasher. Made in the USA, the cookware carries a limited lifetime warranty.
