Presto 06003 Options Electric Multi-Cooker/Steamer Review

I bought this EXACT model in 2001, and along with steaming, blanching, roasting, etc., it clearly advertises itself as a "deep fryer" of which it does an excellent job. The manual even includes full frying instructions!
If Presto has decided to now say "don't fry in this", it is strictly a legal move. The problem is that Presto's "fry daddy" line has no temperature control, and it's preset low enough so that you can't set any frying liquid on fire. But these also have no versatility.
The multi-cooker can do so much more, because you can set the temperature from "warm" to 400 degrees. This is higher than the smoke point of some frying mediums (lard and shortening in particular) and therefore IF you don't know the smoke point of what you're using, you can get in trouble. This is probably why Presto's lawyers decided to say it's not a fryer anymore, although it clearly is. I, however, will happily continue to use my multi-cooker to make great fries, fried shrimp and chicken, donuts, etc. in addition to steaming and blanching vegetables, as well as braising. It's the most versatile appliance I own!

Emile Henry 13-by-10-Inch Lasagna Baker, Cerise Red Review

One of the reasons that I started looking for an alternative to my old stanby 13x9 Pyrex baking dish was because it was not broiler safe. I bought the E.H. 13x10 dish a year ago for this specific purpose, and I have been very pleased with it so far.
The E.H. dish is slightly wider and deeper than my Pyrex dish, which is nice because now I don't have to worry about food spilling over the sides while it is cooking in the oven (most recipes call for a 9x13 dish).
The E.H. dish is also bottom rack dishwasher safe. Because the surfaces are smooth like a Pyrex, it could also be easily cleaned with a scrub brush and a dish rag. However, because the E.H. dish weighs 5 lbs.4.2 oz. (vs. the Pyrex of 3 lbs.9.9 oz.), I would definitely recommend using the dishwasher.
One reviewer mentioned using aluminum foil to line the dish before cooking. I'm not sure if this was to prevent burning? Is so, why not just add a little sauce to the bottom of the dish, as you would with a Pyrex dish? Nothing mysterious here.
Another nice feature about the E.H. dish is that it keeps food hotter out of the oven much longer than the Pyrex.
It should also be noted that the very bottom is not smooth, like the rest of the dish, so take care not to drag it over the counters like you would with a Pyrex dish.
At $60, this dish is a better bargain than the smaller E.H. designer version sold at the William-Sonoma stores. To me, this dish is prosciutto on a spam budget, and is a good buy.
Do not be afraid to use this dish as the manufacturer recommends!

Marcigny, a small town nestling between the hills of Southern Burgundy, has been home to Emile Henry for the past 150 years. Faithful to its origins, the entire production is carried out here. Thanks to its clay, rich in refractory properties, Burgundy has remained a fertile area for potters, passing on their savoir-faire from generation to generation. Clay, a natural and noble material, has been used since the mists of the time to cook or preserve food. While respecting the traditional techniques, Emile Henry has introduced technological improvements (Ceradon ) so that the dishes are more resistant to mechanical and thermal shock. Strong, durable, all Emile Henry pieces can be taken directly from the freezer to the hot oven, can go under a broiler and is microwave, freezer and dishwasher safe. The natural clay is unsurpassed for conducting and retaining heat. All pieces are perfect for everyday use and carry a 3 year warranty against defects.

I purchased this pan to tackle a prime rib roast for Christmas dinner. The pan itself is very heavy, solid and distrubutes the heat well. One thing I do not like about other roasting pans that I have purchased is sometimes the pan juices seem to burn in the oven which results in no "pan goodness" to make gravy with. I have used this pan multiple times and never had that issue- the bits and pieces will brown, but do not get a burned flavor. I attribute this to the construction of the pan and the heaviness of the weight. I would give the pan a solid 5 stars, but the rack that comes with this pan immediately started peeling and rusting even though I ran it in the dishwasher and promptly removed it. So what is a girl to do?
I bought the William Bounds silicon roasting rack (from Amazon) and now use this with my pan. I could have purchased a replacement rack for $19 or paid shipping and handling to get a replacement rack through the warranty, but I have been very impressed with the William Bounds rack and it fits perfectly in the pan. Clean up is a snap- both pieces go right in the dishwasher and come out looking as if I just pulled them out of the box for the first time. Plus, the WB rack has a slightly smaller grid so even on the coldest of days I can have familiy over (about 20 people) and still serve roasted chicken breasts with baked potatoes and salad in a snap.
