In response to the "chef" who has praised this product though the disparagement of the other reviewers and amateur cooks.
As a former professional chef, cookware retailer, and loyal Calphalon user for the past 20 years, I would like to say that I have rated this product only 3 stars due to the fact that Calphalon has grossly oversold this pan's capabilities. As you can imagine I have quite an assortment of pans ranging from French copper, steel, cast iron, and of course anodized aluminum non-stick.
This pan is expensive and does not come through on the promises that Calphalon has made to the buyers. It doesn't offer me enough advantages to warrant its usurping the place of copper-used where temp control and browning are important, cast iron-for high heat,or the traditional non-stick-used for just about everything else.
I have used Calphalon non-stick for the past 15 years as it is heavier gauge aluminum and the non-stick takes more abuse and doesn't degrade under higher temperatures like competing brands (it also browns pretty darn good). I replaced the first set after 7 years when the non-stick became slow to release and the outside "paint" scraped off with constant use. The second set has lasted 8 years and it too is ready to enter the non-stick graveyard. I was looking for a new non-stick set and had hoped that Calphalon One would offer the easy clean-up and easy release capabilities it advertised.
The pans do not release the food like a non-stick pan and they should not say it does. The exterior is only marginally easier to clean than the professional and commercial series (copper is easier and looks better when cleaned). But-the new handle is easier to grip and better balanced. We can only see how long this new finish lasts when "accidentally" overheated as invariably occurs.
Clean up is easy when you follow the instructions and use Barkeeper's Friend (which I have used for over 8 years) inside and out. Permanent discoloration often occurs when the oil film outside the pan is not removed carefully after each use. Also, extra fine steel wool (0000) is great for removing stubborn stains obtained over time.
If you are looking for a traditional non-stick finish do not purchase this pan. If you would like an easier clean up than stainless, less weight than copper or cast iron, and a sturdy finish then this pan is a good choice.

These pans put together the best qualities of cookware....
non-stick and stick
Amateur cooks will expect these pans to be "fully" non-stick. If you expect that, then buy a pan for $9.99 at your local department store.
These pans have non-stick qualities but not fully non-stick. You want food to stick somewhat, which in turn makes the fond on the bottom of the pan, which you turn into a sauce or gravy.
The stick qualities give you the proper browing and carmalization your looking for in cooking foods on your stove top.
Clean up is a snap! It is best to use Bar Keepers Friend as this removes all residue from the pan. I have found that regular dishcleaners do not work properly.
These are expensive, but they will be the only pans you ever need to buy, if you take care of them properly. Do not throw them into cold water right from the stove. All pans will warp if you do this.
They are a nice heavy weight gauge too.
As a professional chef, I have used many brands of pans and these are the best currently on the market. I do not use them in the restaurant as they are expensive and they would get destroyed in our fast paced atmosphere, but I have 2 complete sets at home and you get what you pay for. Perfection!
I mentioned before, if you expect these pans to be totally non-stick, then look for something else.

First of all, let me say I agree with the reviewer who deducted stars from the 9" skillet due to the non-stick coating. Since non-stick coatings are chemicals, I refuse to use any cooking utensil with the coating on them. The original, baked enamel finish on this skillet works great. The secret is using moderate heat and adding oil once the pan warms up, then adding the food items. If the meat sticks, it will unstick as it carmelizes (this also applies to their grilling skillets). I find that I can just wipe mine out and keep using it until I make chili or something messy like that. Then all I do is fill the skillet with water and let it sit a while, then it rinses clean. At the maximum, I've taken a boar bristle brush to a couple of spots once or twice, that's all.
I beseech this company to leave the non-stick coating off their skillets even though one reviewer below seems to prefer it. Or at the minimum give the consumer a choice but I'd bet most would prefer the original, satin finish. In fact, I bought this skillet because of the fired enamel finish as I discovered my well-known name brand stainless steel skillet and stew/pasta pot has too much nickel in them so I can't use them. Anyway, I love this skillet. It makes a good wok too as the burner is under the center of the pan. I can fry up one veggie, push it off to the side where it stays warm while I fry the next one, then push it over until I'm finished. Did I say I loved this skillet?
I wish they made a lid for this skillet as I had to buy another brand which doesn't match but it works. Since most skillets come without lids, this is being silly, I agree. So then, I highly recommend this skillet both for cooking and for easy clean-up.

This is an excellent skillet that requires very low heat for cooking, and cleanup is a breeze. I have the regular cuisinart multiclad set, which is awesome, but I no longer use those skillets since purchasing this one. No more Barkeepers Friend and scouring required. It is off the stove, cool down and wash with dish soap and warm water. I have had no problem with bits of teflon flaking off.
I would highly recommend this skillet to anyone looking.

For years, I've been afraid of stainless fry pans. My experience with them was limited to the time when I was young and not as experienced of a cook. I did not really know how to avoid sticking or how to clean them, and the stainless pans I had 19 years ago I gave away out of frustration.
Let me say, wow! I have really been missing out by cooking on nonstick pans all this time. You just cannot get the kind of sear on a nonstick pan as you can with this.
As for clean up? I use barkeeper's friend and it is high-gloss shiny each time!
You really cannot beat the price on these. They are solid, heavy-weight, have good heat distribution, and they clean up beautifully. What more are you looking for? Don't pay hundreds on all-clad, when you can get these high quality pans for soo much less.
I wanted to add for those that have trouble with sticking: the trick is to let it heat up first, then add the oil, then your food. Hot pan. Cool oil. Food. You'll do much better and avoid sticking a lot better!

I originally wrote this review for the press alone. At the time I bought the press, Amazon wasn't offering the press/pan as a set. Now it does and since anyone interested in this product is probably going to be looking at reviews of the set rather than the individual components, I'll repeat my review, with enhancements:
While shopping a retail cooking store, I fell in love with the Krups FDE312 panini press. A bit of Amazon research, however, turned up a disturbing pattern of sudden failures in this product. Research into other presses from Cuisinart, DeLonghi, Breville, Villaware, and others failed to produce a clear front runner. It seemed that each product had one or more issues - non-removable grill plates, difficult cleaning, lack of grill ribs, flimsy handles, tendency to dry food, non-adjustable temperature, etc. Enter the Le Creuset 10 ¼" grill pan and panini press. You can submerge them to clean. They're coated with enamel, not Teflon, which means with proper care they should last two lifetimes (although they're only guaranteed for the lifetime of the original owner)(and note, this is a satin enamel coating, not the Le Creuset smooth coating, the longevity of which I can confirm from personal experience). There's no electrical element to burn out, no cord to store, no moving parts to break. Use is simple. Heat the grill on one burner (we have gas, but they're supposed to work with other technologies) and the press on the other. Wait until a spatter of water vaporizes almost instantly. Brush grill pan with some oil. Place sandwiches on grill pan. Pick up the press, brush on some oil, place on sandwiches and press for a few moments. Sizzle, sizzle. Wait until the cheese melts. Serve. The panini were just like what I'd eaten in Italy. I haven't owned an electric press, but I can't imagine they'd be better. Cleanup of the enamel surface requires a bit of care but, unlike every Teflon-coated product I've ever owned, that surface will probably still be there 20 years from now. And since the grill pan actually has sides (unlike every electric panini press I looked at), there was no side-spattering and thus no cleanup to do around the cooking area. The only disadvantages - the grill/press combination costs $140, almost twice the cost of the average electric panini grill. But since many of the grill reviews I read spoke of this being their second (or third) electric grill, I suspect you'd make the money back over the next 20 years. Also, running multiple batches is a bit more of a problem than with a self-heating grill, since you need to place the now oily press back on the flame to reheat it, which can potentially lead to flaring of the residual oil, and will also get the burner oily. I intend to see, however, if you can reheat the press in the pan rather than putting it directly on a burner.
