(More customer reviews)Expensive? Yes. Worth every dollar? Yes! The difference in making a sauce in this PORCELAIN insert double boiler and just a metal one is incredible. The keys are that the insert is not in the water and that it is made of heavy porcelain which is gentle on the sauce. No more mediocre bearnaise in this house! An added bonus is that it looks great.
